A delicious home-made version of that ever-popular and nourishing tinned commodity, baked beans in tomato sauce. Remember to start this the night before.
Serves 4
225 g/8 oz haricot beans, soaked overnight
50 g/2 oz butter or margarine
1 large onion, chopped
A clove of garlic, crushed
A 400 g/14 oz tin of tomatoes
2 teaspoons brown sugar
1 tablespoon chopped fresh parsley
salt and pepper
1 Cook beans as directed on page 137 ( som det står på paketet)
2 Melt butter and fry onion and garlic until soft but not brown.
3 Break up tomatoes in the tin and pour into pan
4 Simmer uncovred for about 10 minutes to reduce tomato juice.
5 Add sugar, parsley, salt and pepper.
6 Pour sauce over the hot beans and keep warm for at least 30 minutes so that beans absorv the flavour.
